What I am looking to achieve in this wine is a rich and slightly spicy character. Prior to the harvests I taste the fruit grown in my parcels
in order to ensure the most rigorous selection possible. The grapes are cold-stored for 8 days to promote contact between the juices and the
must. Fermentation takes place in thermo-regulated stainless steel tanks at 16-18°C.
Tasting notes
Color :
Pale golden hue with silver tinges.
Nose :
The already expressive nose discloses fresh fruits, quince, pear, white peach, apricot and a touch of vanilla.
Palate :
The palate is dominated by notes of pear intertwined with mango, fresh pineapple and Japanese pear. The wine’s juicy character and zesty notes of exotic fruits enhance the exceptionally persistent finish.
Serving temperature
8 - 10 °C.
Food Pairings
Cheese and chive scones, goats cheese, seafood or a grilled fillet of turbot in a citrus sauce.
